I've googled for this but haven't found an answer yet, so I apologize if I'm repeating this n00b question. I didn't see a good answer in the Dry Yeast FAQ.

I'm doing 1.4 gallon brews with dry yeast. From all the info I've found, it appears that I need about 20%-40% of a package (depending on rehydration, etc), so I'm left with a good chunk of a package leftover.

Both Danstar and Fermentis state that open packages must be used quickly (3 days for Danstar and 7 days for Fementis). I don't have a fast enough turn-around to be brewing another batch that quickly and I hate throwing out that half packet.

What's the best way to keep that other half of the package for my next brew day (which may be 3-4 weeks later)?

I just fold the package over a couple of times and tape it closed. I haven't had an issue using packages weeks old using this technique.

Also you can use mrmalty.com to determine how much dry yeast you need, if you haven't already.

The fold/tape/store in fridge method is what I've done so far. But given the advice of the manufacterer, I want to try and do the best for my yeast.

My range in use is based on Mr. Malty (.2 of a pack) vs Danstar which advise usage of 100g/100L so 5g/5L for my use.

fold over and tape, for short term, in the fridge in a ziploc bag. Long term, in the freezer and vacuum seal if possible. vacuum sealed in the freezer, I've used it over a year later without issues.
