I made a starter yesterday the intention of brewing today. My kit didn't have the grains ground or a mesh bag so I have to get that stuff taken care of tomorrow and I won't be able to brew until Tuesday. Can I let the starter just sit out?

Stick it in the fridge. Warm it up to room temp before pitching on your next brew day.
 
you could leave it out or put it in the fridge. Just keep it covered and it will be fine. If you refrigerate then remember to bring up to pitching temperature before using.
