I’m looking for a tried and true method to help me ripen my dragon’s breath and Fresno Chili’s.

We have a freeze coming this weekend so I picked what was left. I’d like to salvage these so I can ferment or use them soon.

You can put them in a paper bag with a ripe apple. Ripe fruits give off a gas called ethylene, which causes other fruits to ripen. I've used it for jalapeños, Anaheims, and poblanos. It also works if you have a few ripe peppers instead of an apple. I see in the picture you have some that already turned red. They'll work, too.
 
Too late for you but this year I am trying someting new. I uprooted the plants and have them hanging on a line. I think I have read about people doing this with green tomatoes.
