How to make a super sour raspberry beer

I know how to make beer but not sour beer. So I am look for some advise.

I recently drank a sour beer from Avory and it was awesome. The key things I want to recreate are the sourness, which was what I would call super sour to point that everyone who tries it makes that funny face and a hint of fruity raspberry.

So how do I make this?
 
I've read a technique where you would pitch a vial of Lacto bacteria, wait 2-3 days, and then pitch a lambic blend or just bretts and some regular brewers yeast. That way the bacteria has some time to really sour up the beer.

Just a thought

It would be better to wait 7 days with straight lacto and then pitch the lambic blend.

That said, if you want really sour beer quickly, I'd use a sour mash.
