How often do you check for FG

Sunday, I made the American style wheat kit from True Brew. According to the instructions, it says fermentation should continue for 48-72 hours, and then allow the beer to settle for 3-4 days. Should I check the gravity now and again tomorrow to see if it has stabilized? I did not check the OG, as this was my first brew, FG is supposed to be 1.012-1.014.
 
Im No expert but I check mine at day 8 then day 11 to see if the FG is stable. I'll leave it in the frementor another couple of days after that and then bottle. I try to leave it the fermentor 2 weeks but on lighter stuff I'll bottle after 12 days.

If I'm planning on dry hopping I will check at 10 days and 12 and then rack to secondary, if no dry hopping or long term conditioning I just let it ride for 3 weeks and then take 1 reading as by then it usually complete.
 
I am not planning on dry hopping, or doing a secondary. What I am planning is to transfer from fermenting bucket to keg, and doing a force carb as Craig showed on YouTube.
 
I don't check my FG until I package. My beer sits in primary, typically, until it clears. If it clears, the yeast has done its work.

Since I use a bucket and not a carboy, is it ok to open it and look at it and take a sample after 6 days?

I wouldn't! Wait another week. Then check 3 days apart. Patience grasshopper lol
