Going for my first 5 gallon all grain batch next saturday. I go the pumkin kit from northern brew. It calls for a mash in for 60 minutes at 152, and mash out for 10 minutes at 170. Grain bill is a total of 10.75 lbs.

As this is my first all grain attempt, I'm unsure as to how much water to use in both parts of the mash.Any help would be appreciated. utimate goal is to get around 5 gallons after boil.

What is your equipment setup?

Play it safe and use 1.33 qts per pound of grain
10.75 * 1.33 = 14.3 quarts (3.6 gallons) for the mash

For a 5 gallon batch, I usually boil about 6.5 gallons to get 5.25 into the fermenter.

(by the way, forget the 10 min mash out)

Subtract the volume of your first runnings from 6.5-7 gallons and that is the amount of sparge water you will need.

I basically do this but I need 7 gallons to end up with 5.25. Every system will have a slightly different boil off rate. It took me a few brews to hone in on the correct amounts.

I also sparge with about half of the difference, measure and fine tune the total preboil volume with the second sparge addition. Not really necessary but it works for me and I don't come up short or leave much in the tun.
 
That's my first all grain kit! Unfortunately, I have to wait two more weeks before I can brew. Are you using real pumpkin in the mash?
 
I would advise only this if you choose to use real pumpkin in the mash....
Rice hulls!
It can and will get difficult to drain and sparge.
I use 1-1.5# on pumpkin beers and often feel like 2# would work better.

Going with the 100% pure canned pumpkin. Not in the mash however. I will use at various times during the boils with a majority of it being used in the last 20 minutes.
