I'm brewing a belgian dubbel with orange zest and coriander, 7 days into the fermentation I took a hydrometer reading which was still a couple points high.

I tasted it and it had an almost overwhelming spicy flavor, it's hard to say whether it comes from the coriander or the yeast.

Is this something that might mature out?

I know it's really early, I'm not worried, just curious. it already tastes better than some of these blue moon spiced beers that I've tasted recently.
