Made a batch of cider from good quality juice (organic, uv pasteurized) used cider yeast, fermented to dry. Carbonated and bottled. Tasted it off and on and watched as it went from tasty to boring and tasteless to gradually getting better and better. Now (almost 1 year later) it is lovely. Good full mouthfeel, crystal clear, no sulphur taste or aroma, excellent finish.

Lessons learned: KISS - cider, yeast, good technique.
PATIENCE!! Patience, patience.
Make some beer to drink while your cider is bottle conditioning.
Delightful homemade cider.

Or I've now got to the stage where I'm finishing my 2008 cider as the 2010 starts to ferment, and I'll start drinking the 2009 any time now.
