being on the subject of off increments of 5...i had a SOB batch yesterday, got it finished put my immersion chiller in and got it down to pitching temp, then wondered why it increased in volume, apparently my immersion chiller sprung a leak! so i got it BACK up to a boil and boiled it BACK down, by that time it was midnight, so i went to bed....fixed my chiller this morning and pitched yeast so it's still going to be beer, and i'll love it so! (but i over boiled it the second time, so it came out underweight at 9 gallons)
