..do I have to wait until bottling? This is my second batch and I was told by a friend that it doesn't really matter how early you bottle it just as long as fermentation is complete. I'm 8 days in and fermentation is complete so is it ok to bottle now? I would like to get this done tonight if at all possible. Thanks
 
If fermentation has finished, ie. 3 consecutive days with the same hydromter reading, you are good to go. Bottle that sucker up!
 
I would wait another week to bottle. The yeast will clean up after themselves better when in bulk. 15 days in primary is not long by any standards, no autolysis at all in that scenario. You might transfer less yeast to your bottling bucket as well as some of it drops out of suspension.
