I have been looking into making an Eisbock and aging it for an extended period of time (up to 20 years). I figure it would make an interesting 21st birthday present for my yet to be born kids.

Does anyone know how long you can age an Eisbock for? Or if there is a certain age at which you start getting diminishing returns? I was able to locate a chart which listed ABV vs maximum aging time. It said that 8.5-12% ABV could age from 3-20 years.

Any input or suggestions would be greatly appreciated.
