Hi

I am planning to rack my Cherry Wheat Ale to a secondary where I will use 1.2 kg of cherries to flavor the wheat ale.

How long should keep the Cherry wheat ale in the secondary?
Thanks.
Cheers.

Max

Some will say as long as you need to to get the flavor you want. I'd say no more than 2 weeks should do it. Enough time for the beasts to snag any residual sugar and for the fruit to turn to mush and drop out.

You will notice some airlock activity as the yeast in the beer ferment the sugar in the fruit. Once that stops and the beer drops clear, then you can package it!

If it helps at all I usually secondary my blackberry wheat for 10-14 days to get a good flavor and color.
