How long does it take for an infection to start (in a cold keg)?

I messed up and filled the wrong keg. The keg i filled was sprayed out with water. I smelled it (empty) and it smelled hoppy (from the last batch). It had been sitting probably 4 weeks empty. I filled with star san and purged it before kegging. I know star san isn't a cleaner...... anyways i plan to drink it with family over Thanksgiving. Is one week okay? My gut tells me it will be fine.

Any thoughts? It's an IPA

My gut agrees with your gut. Plus it’s beer, which doesn’t get infected easily, and won’t support pathogens. Keep it cold.

It would be fine 98% of the time.

Just pour the first pint and taste it the day before. If it tastes, looks, and smells fine, it should be fine.
