OK, How long can my wort actually sit in the fermenting bucket before I bottle..? I heard 3 weeks in the fermenter and than 3 weeks in the bottles.. I might have to go out of town and if I do my wort will be in the fermenter or primary bucket for 5 weeks or so.. Will the wort go bad..? does it ever spoil..? idk, this is my first batch...
 
I have bottled my beer after it has been in the primary for 5-6 weeks and have had no problems. Most of my batches go for atleast 4 weeks in the primary. What is the temperature of the room where your bucket is?
 
The beer may pick up some off flavors from sitting on the yeast after it forms a cake on the bottom of the bucket. But there are some who think that letting a beer sit in the fermenter for this long may let the yeast completly finish and clean up the beer. If there is no great risk of serious temp changes, I would think that it would be okay.
 
Your beer will be fine. Actually, it will be better for the wait. I usually go about 4 to 6 weeks in primary but have gone up to 3 months and the beers all came out great.

If you wait a year, you might have problems but most folks that have posted about leaving their beers for a year in primary said it turned out good too.
 
Wort would probably go very bad in 5 weeks.:( I suggest pitching some yeast. Beer has staying power. 5 weeks is nothing.
