I ordered a hard to find strain of yeast (WY800) from MoreBeer on Monday and ponied up the cash to overnight ship so that I could brew today. True to form, MoreBeer didn't ship the yeast until this morning... while I was mashing. MoreBeer promises that it will be here by tomorrow, 3pm at the latest.

SO.... here's my question: How long can wort sit in a sterile fermenter waiting to be inoculated before I should be concerned about wild yeasties and other beasties?

If its sterile I would think longer than 3 tomorrow shouldnt be an issue

I've brewed beers where I chilled to 90 and transferred to a a regular 6 gallon bucket and stuck in my ferm chamber in my musty basement till the temp dropped to pitch temp the next day.....never had a single infection...I wouldnt sweat it...your locked in at this point anyway so it is what it is

If your process is good, you should be good for 24-48 hrs easily.

I regularly will hold wort in a fermenter overnight.
