im having a hard time finding a big enough pot to boil more than 1 or 2 gallons in at a time. would one gallon be enough wort, it will be really concentrated but its fully mixed in the fermenter it should be fine correct?

since im using a bucket it will make it easier to cool the wort quickly since i can just pour it in correct?

Ideally even with a partial boil you would like to be able to boil at least 2 gallons of wort. If you can only boil 1 gallon then it will work, but being able to boil more would help your beers. If you are only going to boil 1 gallon you should be able to cool it easily by pouring it into 4 gallons of cold water in your bucket.

Most stores like Walmart, Kmart, or Meijers sell 20 or 24 quart stainless steel pot for around $40.

i think my current one is 16 quarts so it will do more than 1 gallon, i just want to make sure that will work until i can find something bigger. im trying to avoid spending $50 on a pot for a month or two. thought i could find one at the dollar general but they didnt have anything bigger than 10qt at mine. sucks being on a tight budget!
