Would it be reasonable to make a starter on Sunday, throw it on the stir plate until Tuesday AM, move to fridge, then pitch the following Sunday? It's going to be roughly 1.2L - 1.5L.

That shouldn't be an issue. I would pull it from the fridge when I started heating my strike water, decant any spent wort and feed it about 250ml of fresh wort to ensure that it is ready for your brew.

If you do that just make the starter a bit bigger than you would if you were going to use it right away. Then do as CA Mouse said. I wouldn't bother adding any wort though, if I had the slightly larger starter.
