How does this recipe sound?

It better sound good because I made it 3 days ago. I was going for a high gravity saison style, which from my research is called a bier de garde.

4oz dextrose
.5lbs crystal 20 steeped 20 mins
1lb wheat malt steeped 20 mins both at 155 degrees

6lbs Pilsen DME
1lb clear candi sugar

1 oz goldings 60 mins
.5 oz fuggle 10mins
.5 oz fuggle 1min
1 oz saaz at flameout

Yeast was WLP 568 from White Labs with no starter.
I fermented the first day at 72, 2nd day at 75 and 3rd day at 78.

OG was 1.080 FG = ? hopefully 1.010 or less

Think it will work?

Well, I don't think I'd personally like the recipe. Wheat isn't my thing ;) But other then that, it looks fine. It won't be very bitter though at all, and probably a decent alcohol content.
 
Oh wow, I didn't see that. You want to get to 1.010? Then yeah, you would need a starter. Lowest I've gotten any partial mash was 1.018 with normal yeast (SAFEALE I think...) and it had about 2lbs grains with 6 lbs DME
 
Depending on what wheat you use you need some pale malt to mash the wheat in. I say look a little more into that other then that pretty good, starter and aerate well
