This is the first time I have attempted a fermentation. I decided to start with a cheaters hard cider using 1 Gallon of Dole apple juice and 1 full pack of US-O5 Yeast. It's fermenting at 65°F - 68°F ambient temperature in the room. At first my yeast sank and after about 10 minutes I noticed a little bit had began floating into suspension. It has since began developing gas as evident by the airlock but the head seems weak. What do you think?
