I brew what I have a taste for as well as what the up coming season is. I was leaning towards a little heavier beer and with the holidays not that far out my next batch will be a Vanilla Porter.
The last batch I made was an Irish Red as thats something I usually like to drink and I wanted one as I was looking at what to brew. :mug:

I have a "Jump to Conclusions" mat that I use to pick the styles..QUOTE]

Just make sure your wearing enough flair when you do this.

The People to cake ratio is much too high.

I try to do the seasonal thing (lagers when its cold - ready for summer; big beers 8 months out, etc).

I typically do a rotation: classic style (~55 of em; what does a Berliner Weisse taste like? Baltic Porter? Traditional Bock?), clone of highly-rated commercial beer I cant get here, rebrew of favorite recipe, and the experimental formulation.

Classic style forces me to understand why I would do a process variations (ramping ferm temps; high/low mash temps, H2O/grist ratios, decoctions, playing with bugs, etc.) and I can see how well it hits BJCP. Clone is to see what all the hoopla is about. The rebrew is for process consistency. Experimental is for experience in recipe formulation (what happens if I swap Perle for N.Brewer in a Cali Common?) and strange weirdness (banana chocolate milk stout, anyone?).

Currently, it's 'whatever looks tasty', with the following provisos:

1) One carboy must be filled with apfelwein or apfelwein derivative.
2) One carboy must be filled with some form of fruity beer for the two ladies I live with.
3) Third one is for things I want. Graff currently, but probably doing an english brown ale of a blonde next.

Currently I just brew whatever I am craving. I like the brew calendar though. I am saving that post.
