I am close to bottling my first large batch instead of a continuous batch. I do not plan on continuing the batch but starting fresh with a two gallon btach. The current batch and thick clouds of tea color substance that I assume is yeast(?) and long dangling arms hanging down 3-6 inches. These arms began earnestly yesterday and really took off.
After I remove and rinse the scoby, filter most of the batch I will be prepping the next batch (A 2 gallon batch). I figure I will use 4 cups of starter and the scoby.....So...if I have a solid 4 cups of thick slimy tea colored fluid, do I use it all or limit how much is used?
Can I assume the more of this slime the faster the fermenting will take off?
Of note, I used green tea (50%) in this batch and it has a softer less sour flavor...interesting.
