I have a couple kolsches under my belt now and I’ve finally got this recipe dialed for me.
It turns out nice, light, and malty although I do run a little over style guides for hops/bitter sometimes, but that’s the fun of home brew. You can make it how you want it.
6 gallon batch
Grain bill:
9# German pils
1.25# wheat malt
1# German light Munich
Hops:
1 oz santiam at 50-60
1 oz santiam at 10-15
Shoot for IBUs in the low 20s
WLP 029
I mash on the low side cause I like dry beers. So, 145ish.
Ferment cooler (55ish) to keep the malts in the forefront or room temp if you want the hops to shine a bit. Try to below 65 regardless.
For me the santiam hops is what makes this. Try it out and let me know what you think.
My resent batch just started to clear in the keg so I’ll post a pic later today.
