Horrible color....Pink Milkshake

I just tapped a Gose Sour and made a mistake by adding hibiscus flower petals. I dry hopped 1 ounce of dried flowers in a 5G keg overnight and it is PINK! I got this idea after having a having a commercial hibiscus Gose and it was very appealing.

My beer is a 50/50 Pils/wheat malt (WLP029 Kolsch) and I was looking for the protein haze not thinking the Gose I was emulating was mostly clear. So now I have what looks like a pink strawberry milkshake.....all cloudy and such and real pink. BUT it tastes darn great!

If I add a generous dosing of gelatin will that help me clear some of the protein haze that is helping to suspend that horrendous pink milkshake color? Live and learn. Never make mistakes if you don't try.

A friend of mine is a partner in a craft distillery, and they color their red absinthe with hibiscus flowers. I think you might need to learn to love pink. It does fade over time if you leave it in light - not sure that would be good for the beer though.

Easiest way to attach a single photo is to use the Attachments feature in the reply dialogue box. (See the red/white arrow in my attached picture.) Browse for the picture file on your hard drive, upload it, close the window, and when you hit submit reply, it will be included:

LOL. I may try the gelatin trick to see if any of that color will drop out of suspension with the haze. I honestly think the haze makes the color look more vivid. But, the beer is good and I can always drink it in a stoneware mug!

My cherry saison tends to be cloudy like the way you mentioned as well, but I tend to leave it as it is, in part because a wheat-heavy saison is supposed to be a little cloudy anyway. Looks a little funny, tastes great; that said finings should take care of the cloudiness if you're dead set against it.
 
Fining it at this point may drop *some* of the pinkish haze, but probably not all of it, in which case you may end up with a less cloudy but still semi-pink beer. Afterall, the hibiscus petals didn't dye just the suspended proteins. If slightly clearer and possibly less pink is more visually desirable, then go for it. Maybe you could draw off a sample and scale a gel addition to it to see what it might do. But if it were me, and it tastes as good as you say, I'd just close my eyes and go with it.

I think Krystalweisens are filtered clear mechanically, so I'll post you back how well gelatin will drop the protein haze out of suspension.

If it takes some of the pink cloud out that's fine. Will report back. Pink is fine. Cloudy is fine. But pink and cloudy as a combination is BAD.
 
If it doesn't lose its pink and still looks repulsive (but still tastes great), you probably should ship a case this way and I'll dispose of it for you.

My wife just had a pint and she LOVED the pinkish color! Plus she thought the flavors were great so at least it hits a home run with her. Maybe I have just created a designer beer that appeals to a large market share! Mistakes turned into windfalls?
 
I had a hibiscus sour at The Rare Barrel. It wasn't cloudy, but it was a pinkish-reddish color. I personally thought it was a pretty cool color and tasted nice (maybe a little too much acetic acid, though). Maybe all you need to do is clarify it and it'll be fine? I mean, hibiscus beers usually are pink or pinkish-red anyway.

The commercial hibiscus Gose I was attempting to emulate was much more clear than the Hefe base which I turned pink/red. The commercial beer had a beautiful reddish hue. I used too much dried petals (1 ounce 5G batch), let it hop too long (one day) plus should have used a non-cloudy base. I made more mistakes with this experimental beer than I can remember. Lets see what the gelatin can do.

Note: I was looking at old threads and one member said he/she experimented with a Hefe and used gelatin as a test. Took all of the protein and yeast out of suspension and cleared the beer like a Krystalweisen. I am hoping for similar results.
 
Latest and Greatest! If you followed this thread, I did a wheat beer based Gose sour and colored it red (screwed up is what you can call it) by dry hopping dried hibiscus petals. It turned a bright pink but looked like pink milk due to the suspended yeast, carbonation and protein solids in the beer. I was terribly disappointed.

SO, I fined the beer with gelatin in the keg at 32F. The fining totally dropped out the suspension and it is very clear. Kinda pink still , BUT clear. Now I can drink it and be happy with the beer. Mistakes happen, but what the heck, at least I can drink this mistake!

Several of us had questioned if a wheat or Hefe base would clear with gelatin fining. YES it will! How about that!!!
