Can the fermometer be applied to the side of the fermentation bucket horizontally and still be effective? I can't imagine why it wouldn't. I want to stick it low enough that it's below the top of the beer, but above the water in my swamp cooler.

+1. The first fermometer I bought I put on vertically. Never again.

yeah, for some reason I stuck it on vertically, and now I'm so worried about it I didn't use water in my swamp cooler and my ferm temps are way too high. Probably ruined my first two batches.

Can I peel off and re-apply?

I'd only do it once though, I changed mine around to other buckets a few times and now they dont work anymore. Should have just bought one for each fermenter but nevermind.
