I want to brew a saison and get a pronounced funky taste and aroma. What hops will go well with that?
 
Saaz, EKG, Styrian Goldings, Tettnanger... really any of the noble-ish hops will let the yeast shine.

Any fairly normal European hop will work - at one stage the vast majority of Belgian hop acreage was Northern Brewer, and the whole point of saisons is that you use what's available on your farm, without getting too fancy. So you could argue that even Saaz is getting a bit exotic, the style really calls for "workhorse" hops like NB and Challenger.

However if you want to give it a bit of a spin, I've had some nice saisons with Kiwi hops like Motueka - which may work for you, given your name?
 
I might go with Saaz and use another high alpha acid hop for bittering.

How much Saaz and at what times for 25 liters of 1.045-1.050 wort? I want it to work with the yeast, not overwhelm it.
 
Haven't brewed a saison yet but I like De Ranke's Saison de Dottignies. It contains Challenger, Brewer's Gold, Hallertauer Mittelfrüh and Styrian Golding.. I would assume that Challenger and BG are The early, bittering hops and Mittelfrüh, Styrian are late/aroma hops. The taste is not completely different from trappist ale Orval that takes Hallertauer hops and the Styrian as well. So a lot of different varieties could be used. Just prepare a highly fermentable wort and choose a suitable yeast.
