Hey guys! It's about to get hotter than **** here in Texas, so have been throwing around the idea for something hoppy, but refreshing and sessionable. Also stumbled into a decent amount of Falconer's Flight, so have really wanted to give it a try.

My thoughts so far:

~12-13 Plato
40-50 IBUs

75% Maris Otter
20% Wheat (red vs white...thoughts?)
5% C-60 (was thinking of experimenting w/ Briess' Caramel Munich)

- Columbus or Galena first wort
- Falconer's Flight in the whirlpool and for dry-hop

Our house yeast is WLP002, so was planning on mashing low to dry things out a bit. Thoughts?
 
I'll throw my two cents in. I would switch the marris otter to normal two row( less bready so that the wheat can shine through), and up the wheat to 40%, and add .5 pounds of rice hulls.

I would then change the first wort hop to a 60 min addition. First wort hopping adds some flavor and the hops you chose are more buttering hops than flavor hops.

That's just what u would do if it were my beer.

Here is my " Wheat IPA" if you will.

I love this beer the wheat comes in very good but not over powering. Zythos is somewhat close the FF. I also dry hopped with 4oz of Sorachi Ace.

It's one of my favorites. So yeah, from your original recipe I'd bump up the wheat and use 2-row (but MO is fine if you already have it). I'd go with a light crystal; CaraMunich I would be fine, but I'd personally go for CaraVienne or even a UK CaraMalt (esp. if you use MO).

002 would be great. If you want to spice things up, you could use the Kolsch yeast in the Titania recipe. Fruity & tasty.

I'd drop your IBUs too and add the bulk of your hops late / dry. Just my preference though. Depends what you're looking for.

Definitely on the same page w/ the bolded. Was planning on a huge whirlpool addition, then just enough bittering to hit target IBUs which I'm hesitant to back off all that much. We're sorta going for something like Founder's All Day IPA (which I should have mentioned) and they claim 42 IBUs at only 4.7% ABV, so 40-50 seems reasonable for a 5-5.5% pale IMO. Thoughts?

I've considered switching to basic 2-Row for cost reasons (MO is damn near 50% more!), but honestly the grain bill above was originally for our IPA which I just backed off on the gravity. Might not be a bad idea to simplify things for a smaller beer. Also, the original grain bill was designed for Cali ale which I was concerned about finishing too dry and not having enough malt presence to back up all those IBUs.

If we end up using Galena, great point. I personally like the taste of Columbus though!

Been looking for a wheat IPA and this is something I must brew next. I have FF and Citra so I'll just use those and maybe dry hop with some Simcoe or something but the base of the recipe I will use for sure.
