I just read a story on George Washington's whiskey and how they rebuilt the original distillery and they used hopped water to make it. I'm a fan of bourbon and really would love to try this. I understand that this is not close to bourbon because it's not aged in charred barrels. Anyone got any experience on this

There are a few company's out there that make hopped whiskey sadly, I haven't seen any in my area. Here are some links:

I am lucky enough to live close to Sons of Liberty and I vacation in southern Rhode Island so was able to visit the distillery - great folks. The hopped whiskey is really good. The hops comes through definitely. It has definite citrus notes combined with the sweet of whiskey. I'd certainly recommend it. Worth a trip to RI, probably not but if you happen to find yourself out here, definitely buy some.

Now I'm going to have some...
 
Charbay makes a whisky from Bear Republic Racer 5 IPA. I have had it, and it is definitely a unique taste. A guy who only enjoys a traditional whisky flavor probably would not like the taste... The aroma is like whisky and pine needles, tastes like whisky up front, then through the middle you get "candied" pine needle taste, almost like candy canes but not quite, and finishes with the same candy pine flavor with a little bit of alcohol bite... No real hop bitterness... If I could afford another bottle I would buy it. Its aged in French oak for 29 months.

Side note... I am not much of a brandy drinker at all, however, Charbay makes a brandy (Brandy No. 83) that completely knocked my socks off. It was the smoothest drink I have ever had. Ever. That place is my Kryptonite cause their whisky, brandy, and port are all amazing.
