I'm planning on making the following dark rye saison:
5 lbs Pilsen DME
3.3 lbs Rye LME
.5 lbs CaraRye
.5 lbs Chocolate Rye

I have everything except Goldings (or similar) hops, bummer. So, I was thinking of subbing the goldings out for 1 oz Cascade @ 60 and another 1 oz of Cascade @ 5.

I also have the following:
Amarillo
Mosaic (only 1/2 oz)
Citra
Falconer's flight (7c's)
Magnum
Warrior

I can order some Goldings, but shipping to the island I'm on takes 2+ weeks. Should I wait or sub in something I already have?

Thanks in advance!

I would not use Cascade.

I would use Citra, Mosaic, FF7C'S and/OR Amarillo. Any of these would be able to provide bitterness in a small amount and you could do a hopstand/flameout, or even dry hop with an ounce or two.

Quick question, how about 1/2 oz Magnum for bittering (30-40 min) than 1 oz FF7C's at f/o?
