I'm doing an amber and my LHBS is closed until tuesday. In my freezer I have .75 oz. northern brewer, 1.5 oz. hallertau, 1 oz. saaz, 2 oz. willamette, 2 oz. Kent Goldings, and 1.5 oz. centennials. Any suggestions?
 
I'd bitter with the northern brewer, and use willamette for flavor and aroma. Centennials would work for flavor/aroma as well, though. Those are the only "US" hops I see in your list (although NB is of German origin, and Willamette is a bit "Englishy") so I'd rule out the hallertauer, saaz, and Goldings for sure.
