Was just at the LHBS thinking about a basic scotch type ale, and spotted Briess' Cherry Wood Smoked Malt. Hadn't noticed this before so now I've got 10#'s of Maris Otter and .5#'s of the Cherry Smoked.

I have 1oz of each of these at home:
Saaz
Mt. Hood
Northern Brewer
Citra
Cascade

I also have half a pound or so of a homegrown Tettnang/Cascade mix.

Thoughts on what would be interesting out of all of this? I was leaning towards the Mt. Hood....
 
I've seen older recipes for scotch ale that called for Cascades but only for bittering. If you plan to use any of those for a small flavor addition, I would be interested in the outcome.
