I have a hop bill for a stone IPA clone that calls for
.5oz Magnum at 60 minutes
.64oz Perle at 60 minutes
2oz Centennial at 15 minutes

this is all for a 4.5 gallon boil, I cannot do that much in a boil, but I can do 3 gallons, the hop bill I came up with that has a similar IBU rating is:

1 oz magnum at 60
1 oz perle at 60
2 oz centennial at 15

my question is that even though the IBUs are similar will these two hop bills give the beer the same characteristics? They are contributing different AAUs than the original recipe, that is why I am questioning my hop bill.
 
the 60 minute additions are just for bitterness. they do impart some flavour but not much. the later additions are for flavour and aroma. since you're adding the centennial 15 mins before the end of the boil you should get the flavour and some aroma from them
 
In short, no. You're doubling the amount of your Magnum 60min boil. Using your hop bill, your beer will have more bitterness. Of course, it all depends on the AA% of the hops your using but it would have to be a significant difference.

Example for a 1.065 SG wort (using beersmith with my AA%):
.5oz Magnum (11.6%AA) @60min - 19 IBU
.64oz Perle (8%AA) @60min - 16.8 IBU
2oz Cent (10.6%AA) @15min - 34.4 IBU
70.2 IBU total

1oz Magnum (11.6%AA) @60min - 38 IBU
1oz Perle (8%AA) @ 60min - 26.2 IBU
2oz Cent (10.6%AA) @ 15min - 34.4 IBU
98.6 IBU total

So using the same AA% hops you'd be adding 41% more IBUs to your beer.

Personally I'd just eliminate the Perle addition completely. You won't get much from it at 60min flavor-wise and it should put your IBU level closer to the original hop bill.
 
i'm doing extract, I have a turkey fryer kettle right now, but I could probably boil 4.5 gallons, but I don't have a wort chiller to cool it down. my recipe right now is:

8lb alexander's pale LME (2 lb late addition)
1lb 2-row pale
3/4 lb 20L cyrstal

1 oz magnum 60
1 oz perle 60
2 oz centennial 15

1oz centennial dry hop
1/2 oz chinook dry hop

that was the link I got the recipe from

I plan on steeping for 45 mins in 2 1/2 gal and then adding water up to 3 gallons to boil down to 2 1/2 (my setup only boils off about 1/2 gal in an hour right now)

where i came up with my hop bill is by using brewersfriend.com recipe constructer:
for a 5 gallon batch with a 3 gallon boil I get:
1oz magnum 14 AA: 33.51 IBU
1oz perle 9 AA 20.10 IBU
2oz centennial 22.17 IBU
total: 75.75ibu
 
now I just ran the numbers the with a calculator and paper and got 65 IBUs...VERY CONFUSED!
 
You don't need a wort chiller. Create a make-shift ice bath in a deep stainless sink, or large basin placed at counter height. Make a lot of ice... like 10 gallon ziploc bags full.

I say go ahead with the largest boil you can fit and remember to compensate for the displacement caused by 6 lbs. of early LME.

Adjust the projected FG with brewing software to be between 1.010-1.016. Hopville's Beercalculus is free :) - Adjust the crystal to 3-9% of the total grist depending on your preference for sweet. Not sure where 1 lb. of two-row will get you. I would skip this or double/triple it and get rid of some of the extract. Either way, 2-row should be mashed, not steeped.

I would only bitter with .75 to 1 ounce of Magnum. Skip the Perle. Add a 1.5-2.0 oz. flameout addition and boost the dryhop another 1/2 oz.
