Extra Dark Crystal 160 SRM 1 Lb 9%

Hops

Warrior 15.9% Alpha 9 grams for 14.9 IBU 60 Min
Fuggles 4.4% Alpha 30 grams for 5.0 IBU 10 Min
Kent Goldings 4.5% Alpha 32 grams for 5.4 IBU 10 Min

Yeast

I've used several different yeast for this. If I am in the mood to do a starter 005 does a good job. If I'm being lazy, Nottingham.

Hook Norton's Web site calls for Fuggles, Goldings, and Challenger. I assumed Challenger would be the bittering hop and substituted Warrior as the Alpha is higher and I would get away with using less hops.

For the grain the site list Pale, Crystal, Chocolate, and Enzymic. When I did a tour there I asked about Enzymic malt, brewer stated as a Homebrewer you wouldn't need to use it as they use it to help increase their efficiency.

Looking at my notes from the last time I brewed this, It states I needed to increase the chocolate malt. As the original had a slight dark chocolate taste.

Almost forgot Brown sugar is added with 10 Min left in boil.

Finally getting back to brewing after a two year hiatus and want to give this recipe a shot. Have you made any additional tweaks? What did you increase the chocolate malt to? And how long ferment?
 
I have increased chocolate malt to 5oz. I leave in the fermenter for around 21 days. It's probably ready before that, but at some time in the past I decided 21 days worked well.
Finally getting back to brewing after a two year hiatus and want to give this recipe a shot. Have you made any additional tweaks? What did you increase the chocolate malt to? And how long ferment?
