Hi,

I am following the PM Gilda clone recipe from this forum. The instructions say to leave it on 2 oz of oak for a year.

What I ended up with is the Honeycomb barrel alternative. Quite a bit less than 2 oz, but I guess that's the idea.

The instructions with this product say full extraction in 6 weeks. I am wondering should I just add this for 6 weeks at the end? Or should I just toss it in now for the year?

Thanks,
-Tom

I haven't actually used it yet. I did manage to get a hold of someone from the manufacturer. Based on what she said + the existing instructions I'm going to wait until I get the sour profile I am after, then add the oak for 4-6 weeks.
