Honey Mead Niagara Wine

I'm looking for a good recipe to try a Niagara wine made from honey mead. I'm trying to emulate the Finger Lakes winery Earle Estates Niagara wine, even though I'm not 100% sure that particular wine is made from honey mead as most of their win is.
