Homegrown Wet Hop IPA Suggestions?

Hey everybody,

I'm about to pick somewhere between 6 and 8 oz. of wet Columbus hops from my garden. I'd love to use them to brew on Tuesday. I could dry them, but I've had a few wet IPAs lately and I want to try and make something with them. Plus, I'm having a few friends over to brew who love ipa's but have never made beer. I'd like to do something with a lot of additions so it gives them something to do. I've got quite a bit of base malts and specialty malts saved up and would like to make something bigger (7-9% ABV) but not too sweet. I want to get the earthy/grassy flavor of the web hops as well. The only IPA I've ever made was the Hopslam clone from HBT. I've got the following hops on hand (but could also pick more up if needed):

1/4 oz. US Fuggle
1/2 oz. US Tettnang
2 oz. Simcoe
1 oz. Falconer's Flight 7C's
2 oz. Zythos
1/2 oz Styrian Goldings
1 lb. Columbus
1 lb. US Magnum
1 lb. UK Fuggle
1 lb. Czech Saaz

And of course, 6-8 oz. wet Columbus from the garden

Just something in mind the ratio of wet to dry hops is 5:1. So you have about .83-1.6 oz. of Columbus there.

Yeah, I know It's not a lot. There is a possibility that it may be more. It's a third year plant but I've only had it in the ground here this year.
 
I think columbus is a nice complementary late addition hop in lesser amounts. You could easily work with 1.5 oz of dry columbus (i.e. 8 oz of wet columbus).

Try 1/3 of the hops at 15, 10, and flameout, plus let them steep for 10 minutes afterwards. Using some complementary hops at those timings would round it out nicely (falconers, zythos, simcoe). You could even add in a 5 minute addition of your on-hand hops, saving the last 1/3 fresh hops for the flameout. Naturally, you'd want to dry hop after fermentation is complete and clearing. Who knows, maybe by then you'll have some more columbus already dried to dry hop with??
 
You might consider doing a one-gallon batch and a separate five-gallon batch (all with the same grain bill). For the one-gallon, use a pellet or other dried hop for bittering, and then use exclusively wet Columbus for flavor/aroma. That will at least allow you to get your homegrown crop shining through on a few bottles.

I thought of this... but I really want to make one batch. I don't have the equipment to make two at the same time.

After looking at my plant I may have more hops than I thought. It's a 15 foot plant that is full of hops. So I may have about a pound or two of fresh wet hops? I don't really know as this is the first year.

I was thinking about this recipe. Any thoughts? The 30, 15, and 10 minute additions are with the wet hops (they say 1 oz. but are actually 5 oz. of wet stuff... thanks for the info Fathand!) I'm open to any suggestions:

I've modified the recipe a little bit to bring down the IBU's and hopefully add some more earth/piny flavor from the Columbus. If no one comments on this one then it is what I will be brewing on Tuesday. The 15, 10, and 5 minute Columbus (all 14%) are the wet hops. I'd love to use them for dry hopping or flame out but I'm not sure what bugs they might have on them. I'll post an update when it's done in case anyone is interested in the wet hop aspect of this brew....

The recipe looks good. The mash temp, IMO, is a little low especially since you're using 1lb of dextrose. You're going to end up with a BIG beer - between 9-10% ABV. Then again, maybe that's what you're after.
