Five gallons unpasteurized fresh pressed cider from a local orchard, fermenting naturally w no external pitch.
Picking mine up Saturday! Haven't tried to make cider in a few years. This go around I'm going the natural route also. Trying to keep the ferment around 50F and racking several times to see if I can avoid the 'assy' flavor my previous attempts have had.

Hmm...Mine's in low 60s right now. Blowoff aroma was all apples this morning but maybe I'll drop it into the keezer tonight. Not interested in any assy cider!

It takes a while to develop. I think it's from autolysis, but maybe from the microbes active at higher temps, so I'm hedging my bets with the cool ferment and racking off sediment as it develops.

Good to know. I'll keep the temp stable until it ferments out and follow your cue on racking. Not sure what I have here but there was definitely fermentation activity at fridge temp in three of the five gallons.
 
Made 4 batches of homebrew with custom labels to to give out as favors at my wedding. They turned out great! Left to right is IPA, Cider, Imperial Stout, Gose.

No sheeeet? Literally did the same thing for my wedding on Nov 19. Brewed a Grisette/Sour Farmhouse, Blueberry Saison, Raspberry Saison, and an American Wheat Ale. Tradesies? Also have custom labels... more just small stickers though

Very nice! Mine was November 12. Unfortunately all the labeled bottles were taken by the guests. I have 2 extra bottles of imperial stout and 1 of dry-hopped gose that were carbonation test bottles. Would be happy to send them your way though. I'll shoot you a pm.
