Holy crap! My first beer tastes like beer!

Everything is going well so far. After 8 days in bottles (I know.. 3 weeks minimum) I put one in the fridge, because I can't leave well enough alone. That was 2 days ago. So tonight after eating to much at a family gathering (my wife is Greek.. so much food) I decided to sample my err.. sample. It hissed just right when I popped the cap, it poured great, and had excellent head and lacing. It's still young, obviously, and still has a bit of a bitter finish, but it's future is looking good.
Now.. who is going to help me drink the other 19.5L becuase that will last me and my wife for months.. and I want to get brewing another batch.

Your beer will continue improving for a few months. I drink only one bottle per day and my wife drinks not at all but I compensate by brewing half size batches. I have 5 in fermenters waiting to be bottled now.

good to hear though. what style did you brew?
 
Get another batch going which will help you with getting a supply built up which may help you wait for aging some. It won't last as long as you think most likely.
 
My first batch has only been bottled 5 weeks and I am already down to 12 bottles. Although it did make brew day better for a other batch.

You'll find you drink beer a lot more frequently when you have so much around. The nice thing about bottles is they will keep for a very long time, so you can do another batch...only issue is bottles and how many you can store logistically.
 
Find yourself a glass with a hole in the bottom and you'll be able to brew as often as you like.

Seriously. We had stocked up on our homebrews early last year after whipping out 4 each 5 gallon batches and had it all bottle conditioning at the same time. My wife (who does not drink) said to me and my sons, "You guys need to start drinking this beer!"
Silly girl. I love her!
 
I screwed up my pipeline by waiting an entire month between the last two batches. There will have to be a few store boughts in the middle between now and the time to start drinking my home brew. I have 6 cases I believe, that are right on the edge of drink ability. No, they are not all the same flavor.
 
Congrats on your first batch and I wish I had your problem... I finished making my first 2 batches exactly a month ago and I just finished them tonight :( I have 2 in secondary with a week to go before I keg and I'm starting to worry that I need to get another 2 kits into primary now!

It is surprising how after 4 weeks of fretting about fermentation, infections and second guessing about if you sanitized enough, just how damn good the finished product can turn out!

My advise is to buy another bucket and get busy. You can leave your next batch in secondary till you are ready for it or bottle it for a change so you are not drinking the same thing all the time.

You can leave your beer in the primary for quite a while without degradation and save having to secondary. I've left one for 9 weeks with no problem.
 
Congrats on the first brew "tasting like beer". I had a similar sigh of relief with my first one, too, just a few weeks ago.

I had a second batch into the fermenter before even bottling the first one, and I stayed up till 1am to get a third batch going just in time to leave for vacation (hope it doesn't bubble over while I'm gone :0 ). I would really like to get a "pipeline" going, and there never seems to be enough free time for anything, so I'm going to try to keep those fermenters full whenever I can find 5-6 hours of spare time. As for availability of bottles... I'll cross that bridge when I come to it. :D
 
The more I brew the more I want to brew.
Took a case to a party and it was the first gone. Have tons left over from a wedding I brewed for (almost 10 cases) plus 2 other batches bottled and I have a saison bubbling away. I know I need to drink more before I brew more but I have so many recipes to try.

I have a secret to share with you. A batch of beer doesn't have to be 5 gallons. 2 1/2 gallons makes a case of bottles and now you have another recipe to sample.:rockin:
