I've been going by the...forgive me if I misspell, but anyway...homebrewer's bible by Charles Papazain. Not the name of the book, but you should be able to find it on a google search, good luck! A lot of info, but I must say that I have probably learned just as much, if not more, from this forum.

Did a quick search and the name of the book is "The Complete Joy of Homebrewing" Volume:whatever...I have "2", I guess that I need to update;)

I have read -
"The Complete Joy of Homebrewing" by Charlie Papazian: A how to with a lot of why it works that way information plus recipes, resources and suggestions.

"How To Brew" by John Palmer (free on the web): Mostly how to.

"A Treatise On The Brewing of Beer" by E. Hughes (Open Source): Tips for brewing in the 1700s, a quick read

"Yeast" by Thomas Henry Huxley (Open Source): What people knew about yeast in the 1800s, also a quick read.

"Radical Brewing" by Randy Mosher: Another how to but with a lot of graphics and information about why to brew rather than just how. Unorthodox recipes and techniques.

The Brewer's Tale: A History of the World According to Beer
The Audacity of Hops: The History of America's Craft Beer Revolution
IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale
Beer in America: The Early Years--1587-1840: Beer's Role in the Settling of America and the Birth of a Nation
The Oxford Companion to Beer

Not a beer history, as much as a history of American drinking habits, but I've always enjoyed the book Early American Beverages. And since you can get it for less than $10 all day long as a used book, I tend to buy extras and give them away to friends.
