Pro Pig - pork rinds, fried pimento cheese
Doc Ponds - beets and brussels, glazed carrots, mac and cheese, salted caramel milkshake

Planning a trip to New England this fall and spending two nights in Waterbury. If you had two nights, would you recommend Hen or the Wood and Pro Pig for supper? The Old Stagecoach for breakfast? Plan is to head up to Parker Pie to be there when they open and subsequently go to Hill, Nichol's Pond, Lake Elmore, Moss Glen Falls, Stowe Cider for the misses, Alchemist, and then supper at Hen of the Wood...in a day. Wish Jasper Hill gave tours or was open to the public.

Following day, breakfast at Stagecoach again, visit Peck Family Farm for syrup at 10:00 am, lunch at either Mad Taco or Three Penny Taproom, then head southeast to Boston.

Open to any suggestions!

Willey's in 'downtown' Greensboro has a pretty solid selection of JH cheeses at a marked discount. Would be worthwhile stop if you're looking to stock up.

Hen of the Wood vs. Pro Pig? The former is arguably the best restaurant in Vermont, and the latter is average BBQ with average house beers. I realize people consider Pro Pig an institution, but everything about HotW in Waterbury is top-notch across the board.

Hen of the Wood vs. Pro Pig? The former is arguably the best restaurant in Vermont, and the latter is average BBQ with average house beers. I realize people consider Pro Pig an institution, but everything about HotW in Waterbury is top-notch across the board.

They could work on their beer list, but they probably don't need the clientele

That said, I do look at Pro Pig as a better lunch option versus dinner, and I prefer to hang, eat, and drink in the back/brewery versus the front/bar.

I'm with Gene on this one. I love the Pros house beers and I am not just saying that because natejohnson is an active member, they are genuinely very good.

I've never been to Pro Pig but Frank has sent me numerous crowlers in the last few years. I wish we had local beers as good as their house beers. Not just blowing smoke. Their hoppy beers hit the feels for me, FWIW.

We've been to Waterbury a couple of times but have always stayed at the Fairfield Inn. Going to be staying at the Stagecoach for the first time in the fall, just booked it. Very excited about that.

Yeah, that’s pretty much it. One probably wouldn’t ever be in a situation where they’d be deciding between the two... and if they were, they’d probably be too late to get a reservation at Hen anyway.

I'm not the biggest BBQ person but Pro Pig usually has good specials... and as stated before, I dig the small plates there. I do thoroughly enjoy the house beers and they have gotten progressively more impressive since they started... as Gene said, I like to have lunch at the brewery... ramen or tacos are always good

I also love the staff at Pro Pig... Frank, Chels, natejohnson, Jay... they've always had some really great people there that makes it very comfortable for me

Yeah it may have been overkill but I made our reservation at HotW 2-3 months in advance last fall. One of the best meals my wife and I have ever had. Can't wait to get back there.

All this Waterbury love makes me think of how much the beer scene has changed this town. When I was growing up in the area, the only thing of note in Waterbury was the state psychiatric hospital.
