Planning a higher grav Weizenbock and all the yeast strains I'm seeing at wyeast for wheats have a 10% ABV tolerance and my recipe at the moment is right at 10% on brewsmith. I was planning a fairly extensive mash temp schedule to make sure we get good conversion but I'm concerned about what will happen if it ends up way over the mark at a 12% or something.
What are my options here, will using a big starter help? Should I pick up some high gravity yeast to throw in in case it stops early or will that greatly affect the flavor of my beer?
also, here's what I have so far for a recipe:
10lb red wheat
4lb german pils
2lb torrified wheat
1.5 lbs melanoiden
1lb munich
1lb honey malt
1lb biscuit
.25 lb special b
1lb rice hulls
any input at all would be greatly appreciated, as always.
