Hello all,
I have an APA that has been fermenting since Monday with white labs California ale 0001. It is in the same place I ferment all my beers which stays 68-70. It seemed a little brighter than usual so I wrapped a blanket around it yesterday. Today when I checked the stick on thermometer during a pretty active fermentation the temp was 75. I moved it to a cooler darker spot but can the rise in temperature during the begininng of fermentation cause anything negative? Thanks for all of your help.
James

It can, since temperature is the most important during the primary fermentation. I fermented at 74 for a couple days on a pale ale, and had no off flavors. Im pretty sure you will be good as long as you move it to a cooler spot for the rest of the process.

Esters tend to become more prevalent with higher temperatures. The first few days have the most effect on the beer. At 75 degrees with a very clean yeast such as 001 shouldn't cause too much of an issue though. I wouldn't worry about this brew, just prepare for your next batch.

I don't think you'll have issues with esters using 001, just give it a few weeks to clean up in the primary and you should be fine.
