I have made a couple of batches with pellet Hersbrucker hops now and they are giving the beer a definite vegetable smell. They are fairly fresh, bought them from Hops Direct a couple of months ago and I keep them vacuum sealed in the freezer. I also bought a bunch of other hops from them at the same time, store them in the same place, same way, and no problems with any of the other hops. Is this part of the Hersbrucker aroma? I can't imagine that it would be, considering that it is supposed to be a noble hops with good aroma. The beers I have made are Vienna and Oktoberfest. Thanks in advance.

I have only used them twice.

1. Cream Ale - Definite peppery smell and taste to me. (FWH only)
2. Hefeweizen - What ever is here is either masked or too little to taste.

Anyone else taste the same thing you do? You might just be over sensitive to the taste, or it may not even be the hops and might be some other issue.

Yes, my brew buddy said it tasted like a squash at first. With the Vienna, the flavor has diminished considerably, but it is still there. The Oktoberfest I just made and I smelled it and it smells like a plate of spaghetti or something.

It's not the herbrucker hops (if they were kept/stored properly) that the vegetable aroma is coming from. Sounds like a brewing technical problem.. maybe DMS

hersbrucker should have a profile like herbal

Pleasant, spicy/mild, noble, earthy aroma

I bought a pound of GR hersbrucker pellets from hops direct and they are fine!
