Well I was set to get a wee heavy made to age until Christmas with Denny's Favorite yeast. This yeast died in transit from ABS :(, and with temps in the 100+ range I am afraid to order online as the same thing might happen. The LHBS carries nothing but dry yeast and the one in Fayetteville (20 mi.) carries only White Labs yeast and have no Scottish in stock.

I have WLP002 harvested and in the fridge, along with San Diego Super. I don't think SDS is it for this brew. What say ye as to a White Labs yeast I can call and see if they have in stock to use for a wee heavy which will be aged on whisky infused oak chips?
 
how do you know the yeast are dead? did you pitch the smack pack into a starter? the 002 would be fine if they're out of 028
 
Since Scotch Ales are malt forward with a clean yeast characteristic, you might want to try S-05 or WL001 (whatever it is). I saw a recipe in BYO for Old Chub that uses it instead of the Scottish Ale strain. Just ferment cool and give a good diacetyl rest.

Yep, been in there 36 hours with no decrease in gravity.
 
They agreed to replace it and didn't have the original and will ship 1728 Scottish and we'll see if it survives. If it does I won't be any worse off other than not getting to try Denny's Favorite at this time.
 
I'm a big fan of Midwest Supplies ice pack shipping for yeast that I can't get at my LHBS.
 
JZ stated on several forums that he uses wlp001 or 1056 Cal Ale for his Scottish ales and has medaled several times using that yeast. If I remember right he said its cleaner than the Edinburgh strain and allows him not to have to keep a separate strain going for Scottish ales.

On a side note, he mentioned doing a 60 schilling at 1.035 with one smack pack of yeast is a great way to build a yeast cake up of 1056 for anything else.
 
I would choose wlp002 you have it! If it doesnt attenuate enough for you pitch some of that SDS to finish the job. Good Luck!
