Help with a custom dark beer

Hello beer lovers!

I want to use some leftovers from previous recipes so I've used BeerSmith and I came up with this. Is this viable?


TYPE: Partial Mash

0,1 oz Toasted Wheat (456,85 SRM)
1,4 lbs Brewferm Dark Malt Extract (22,84 SRM)
2,8 oz Brown Sugar, Dark (50,00 SRM)
0,597 oz Fuggles [4,50 %] - Boil 60,0 min
0,5 pkg Trappist High Gravity (Wyeast Labs #3787)


Mash Schedule: Single Infusion, Medium Body, No Mash Out
Total Grain Weight: 1 lbs 14,2 oz

Mash In: Add 2,481 qt of water at 152,00 F for 60 min
 
Holy crap, at first I didn't realize you're European and saw "1,323 gal".... and I began wondering why/how you're doing a professional sized batch! :D

I dunno, seems good to me. However if you're doing a mini-mash you need a base grain that has enzymes. Add 0.5 - 1.0# or so of pale 2-row, vienna, munich, or almost any malt that isn't crystal/roasted/toasted.

Can I use Pale-Ale (7ebc)? Because it's the only I got right now. If not, I'll wait till next week.

Sadly no, Cara-Pils is still a crystal/caramel malt, which has no enzymes.

Sorry Reno_eNVy, seems like I've edited my previous post when you were writing. It's Pale-Ale (7ebc). Since I brew extract/partial I don't have lots of base malt, just specialty grains.


If you're only making 1.3 gallons, why not do it all-grain and save the DME for later?
That DME is open since last week (tuesday) and I won't be brewing so soon, so I'm afraid...
