Can y'all verify that I converted everything correctly? I found this recipe on brewmaster and used their converter.

X = Y * (15/1.63), for Pale Malt, 52*(15/1.63) = 478 oz = 29.9 lb

Looks like you have it correct.
 
Then why would my abv and gravity be different?

I am going to get a lot of flak for saying this but it is because recipes don't scale linearly, especially when you're converting a 1.63 gallon recipe up to a 15 gallon recipe. Basically, all of the factors that go into calculating volumes and efficiency change and in turn has an effect on them which changes your gravities, srm, etc.

Try something like this:

23 lbs - 76.31 %Pale Malt (2 Row) US60 mins1.036
2 lbs. 10 oz. - 8.80 %Chocolate Malt60 mins1.028
1lbs 5 oz. - 4.41 %Caramel/Crystal Malt - 80L60 mins1.034
1lbs 5 oz. - 4.41 %Caramel/Crystal Malt -120L60 mins1.033
14 oz. - 2.93 %Cara-Pils/Dextrine60 mins1.033
10 oz. - 2.20 %Carafa III60 mins1.032
5.oz - 0.92 %Roasted Barley60 mins1.025


The SRM will be a tad bit off which you can adjust by increasing your darker grains a tad. I.e: instead of using 350L Chocolate malt use 450L and add a few more ounces of your crystal or carafa.
