This is a clone recipe I worked up of Pray for Snow from 10 Barrel Brewing. It's a 5 gallon extract brew here, but I'm in the process of converting it to a 10 gallon all-grain batch. Any input on how to approach that would be welcome. :)

I will say that this is probably the best beer I've ever made. I've gotten pretty universal praise on it from everyone who has tasted it. I'm in love with it myself, but I'm always open to honest input.

Brew notes are included for your edification. :)

Notes
Grain ratios suggested by /u/oldsock on Reddit's /r/homebrew forum.

Steeped grains between 150°F -170°F for 30 minutes in 2 gallons of tap water.

While Grains were steeping, brought 3 gallons of water to boil. Removed from heat and added 7 lbs of Briess CBW Pilsen Light DME and stirred until completely dissolved.

Added the steeped wort to the kettle. Added 1 gallon of 150°F water to steeping pot and steeped the grains for a few minutes more and then added that liquid to the kettle. Dunked and drained the grain bags and squeezed a portion of the liquid into the kettle. Discarded he grains. Took a pre-boil sample for Gravity reading.

Brought wort to a rolling boil and added 1oz whole Chinook hops. Added another 1 oz of Chinook at 30 minutes. At 55 minutes added 1 oz of Hallertau.

At 60 mins removed from heat and placed kettle in cold water bath with water running to maintain cool temp. Cooled to approx 80°F in about 25 minutes.

Racked to 6.5 gallon carboy and added ~3/4 gallon tap water to bring volume to 5 gal.

Took samples before adding volume and after. OG from final sample came to 1.062 at 68°F. This could be erroneous.

Pitched one packet of Wyeast 1056 at 72°F. No starter.

By following day fermentation was well under way.

Racked to secondary on 2/06/16. Harvested yeast.

Bottled on 2/14/16. Used 4.6oz corn sugar boiled in 2 cups water to prime. Filled 51 bottles.

With the extract only serving as a base you could probably sub it out pretty easily with 1.45-times by weight of 2 row, so 7lbs extract would convert to, say, 10.25lbs 2 row.

I do enjoy PFS. Gotta try this one!
