HELP! Need a recipe

OK so I just decided to make a holiday cider to give as gifts for Christmas. What is a good still cider recipe with a quick turnaround (less than 30 days)? I'm thinking something holiday seasonal if that makes any sense. Thanks and LETS GO MOUNTAINEERS!!!

This Christmas? 2013? Well, you could do just apple cider and nottingham or S04 ale yeast. It might be clear by this Christmas. Adding any spices like cinnamon would be optional, but those might take a bit longer to age to a good flavor.
