So I have an Extract Pumpkin Ale that I ordered from Midwest about a month ago, and I never got around to brewing it. Now that the season is pretty much over, I don't have much interest in the pumpkin (I never really did, but that's another story), so now I have some ingredients and I don't know what to do with them. The kit consists of:

Fermentables: 6lbs of Gold LME, 8oz brown Sugar
Specialty Grains: 8oz Carapils, 8oz Caramel 10L
Hops: 1oz Mt Hood, 1oz Cascade
Yeast: Fermentis Safale Dry

So I have a homebrew shop a few blocks away that I can pick up more hops or grains or whatever, but I don't even know where to start. Can anyone help me make something out of this? If I were to just brew what I have minus the pumpkin spices and pumpkin flesh, what would I have?

add some chocolate malt and make a pumpkin porter! Find a porter recipe first just to have an idea of what you'll need, but that sound good IMO. Prefect for Christmas.

Whatever you decide to do, take good notes. This will end up being more or less your own creation. You may want to repeat it or tweak it later.

I plan on picking up a pumpkin extract kit tomorrow since it's on sale for $20, but don't want a pumpkin beer. Thanks for the suggestions!
