I have 4.5 gallons fresh pressed cider. I added about 4 lbs sugar to some water. Heated sugar in water to disolve. I used S05 yeast. OG 1.070. At 1.020, I put the carboy outside where it was in the 40s f. After 2 days, I racked and added 2.5 tsp of potassium sorbate

As soon as it warmed up, bubbles were forming on the top and the airlock showed activity. One day later I added 2 more tsp potassium sorbate and 5 campdem tablets. Stirred 6 hours later with a racking cane. Still activity. Last night I put it back outstde. What now?

Sorbate doesn't stop an active fermentation- all it does is inhibit yeast reproduction. Since you have plenty of yeast in an active fermentation, it will keep chugging along.

Stopping an active fermentation is like stopping a freight train. You can try putting it somewhere at 33 degrees for a week or two, then racking off of the lees and maybe again, once it's totally clear and that might work.

Or you can let it ferment out, and then stabilize and sweeten to taste.
