Greetings HBTers!

Have spent the last four months pulling recipes of of this site....most notably, requiem razz, simple hefe, zombie dust clone, and a few others. I'm in between recipes and am next planning on brewing a belgian strong ale in two weeks.

I'm at a point now where I've accumulated a variety of grains and am wondering if I have enough to pull together something else (that is unknown to me). Otherwise, plan is to continue refrigerating. So, here's what I have so far:

1.5 pds of carahell
.5 pd of caraaroma
14 ounces roasted barley
3.5 ounces crystal 40L

Any thoughts from what I have above? I assume I'll need some DME to go with it. Real concern, I guess, is how long I can stored milled grains before they go bad, thus my own urgency to want to use them.

I would omit the roast barley, but 7.5lb of DME, ouce of northern brewer. Should be fine.

You're brewing extract I'm assuming, so I'd use these to brew three separate beers:

Stout
Roasted barley 14 oz
Add 3 oz of black patent
Add 4 oz of chocolate grain
6.6 lbs DME or LME
Fuggles or Goldings or Willamette
s-04 yeast

Use the cara's to brew a kolsch - using WLP011 or WLP029
Use Hallertau and/or Norther Brewer hops
6# DME

Use the 40L, but add another 8-12oz and brew this:
